Recipe: Roasted Butternut Squash + Apple Soup

Here’s what you’ll need:
- 8 cups butternut squash, peeled, sliced, seeded and chopped into bite-sized pieces
- 2 apples, cored, peeled and chopped into bite-sized pieces
- 2 yellow onions, chopped
- 2 cups low sodium chicken broth (vegetable broth also works well)
- Black pepper
- 1/2 tsp. curry powder
