For today’s What’s Cooking Wednesday video, let’s take a look at a decadent and unconventional Thanksgiving dish as Dani Spies shows us how to make this roasted butternut squash + apple soup!

Here’s what you’ll need:

  • 8 cups butternut squash, peeled, sliced, seeded and chopped into bite-sized pieces
  • 2 apples, cored, peeled and chopped into bite-sized pieces
  • 2 yellow onions, chopped
  • 2 cups low sodium chicken broth (vegetable broth also works well)
  • Salt
  • Black pepper
  • 1/2 tsp. curry powder
