You don’t have to search far and wide to find a sweet green, gold and multi-colored treat to celebrate the holiday. These St. Patrick’s Day Rainbow Cupcakes are fun to bake, decorate and eat! Of course, you will probably want to share at least one of them to spread your luck around. Maybe?

What You Will Need:

  • 1 Box of Your Favorite Cake Mix (plus any oil, water and eggs, as required by the instructions on the box)
  • 1 Container of White Icing
  • Green Food Coloring
  • Yellow Food Coloring (optional)
  • Yellow Sugar (optional)
  • Air Heads Xtremes Rainbow-Striped Candy
  • Rolo Chocolate Candy (or giant chocolate chips)

Make the Cupcakes and Icing:

Prepare and bake the cupcakes according to the instructions on the cake mix box. While the cupcakes are in the oven, prepare the icing.

You will use the white icing for three purposes, depending on your decoration method: 1) It will become the clouds that the rainbow sits in (refer to photo); 2) You will use the green food coloring to tint it green to create the “grass” effect on the tops of the cupcakes; and 3) You will color it with the yellow icing to simulate “gold” in the pot of gold. Mix colors accordingly, as needed.

Be sure to let the cupcakes cool completely before you add the icing.

Once you add the grass and clouds to your cupcakes, set them aside to let the icing harden a little. At this time, you can create the rainbows. If your Air Heads rainbows are too long, trim them down to a more appropriate size, such as 4 inches. Once cut, shape them into an arch and set each end into a cloud on top of each cupcake.

If you are using a Rolo candy as your pot of gold, place one Rolo at one end of the rainbow, beside the cloud.

If you are using a large chocolate chip as your pot of gold, place one pointed-end-down into the cloud and add a yellow blob of icing on the flat end to resemble gold. Sprinkle the yellow icing with yellow sugar to make the gold sparkle.

That’s it! They are ready to share… and eat.
