Laura Vitale has a delicious and easy recipe for sweet potato fries. These are a perfect Summer cookout side dish that everyone will love. The best part is that sweet potatoes are a great source of vitamin C, potassium, dietary fiber, beta-carotene and vitamin B6.  Healthy and tasty?! Enjoy.

Ingredients

  • 3 large sweet potatoes (serves 4 people)
  • 1 tablespoon of olive oil
  • 1 tablespoon of chili powder
  • Salt & pepper to taste

Directions

  1. Preheat oven to 450 degrees.
  2. Line a baking sheet with aluminum foil and preheat it in the oven for 10 minutes.
  3. In a large bowl, toss the potatoes with oil, salt, pepper and chili powder.
  4. Place them in a single layer on the hot baking sheet, and roast in the hot oven for 35-40 minutes or until golden brown and crispy.
  5. Toss half way through for even roasting.
