What you’ll need for the crust
- Cupcake liners
- 2/3 cup graham cracker crumbs (about 5 whole crackers)
- Rolling pin
- 3 tbsp. unsalted butter, melted
- 1 ½ tbsp. granulated sugar
- Pinch of salt
What you’ll need for the filling
- 2 – 8 oz. packages cream cheese – softened
- ½ cup granulated sugar
- 1 tsp. vanilla bean paste or pure vanilla extract
- 2 large eggs at room temperature
- ¼ cup sour cream at room temperature
- 2 tsp. lemon zest
- Pinch of salt
What you’ll need for the topping
- Seedless strawberry (and/or raspberry) jam
- Fresh strawberries – cut in half lengthwise
- Fresh raspberries
- Fresh blueberries
