Spring Farmer’s Market Salad

Ingredients:

1 medium-sized head of your favorite lettuce, torn or chopped
2 medium-sized tomatoes, seeded and diced
4 ears corn on the cob, sliced off the cob
1/2 medium-sized red onion, diced
1 medium-sized avocado, diced
1 medium-sized bell pepper, diced

Optional Ingredients:
1 medium-sized jalapeno, seeded and diced
1/2-cup cilantro, finely chopped
3/4-cup canned black beans, drained and rinsed

Method:

Combine all ingredients in a large bowl. Final touch: Highlight the flavors with a simple lemon poppy seed dressing (recipe below).


Lemon Poppy Seed Dressing

Ingredients:

1/2-cup extra-virgin olive oil or canola oil
3 Tbsp freshly squeezed lemon juice
1-1/2 tablespoons poppy seeds
1 Tbsp finely minced onion
1-1/2 tsp Dijon or honey mustard
2 tsp grated lemon rind
2-1/2 tsp granulated sugar
1/2-tsp poppy seeds

Optional Ingredients:
Salt and pepper, to taste

Method:

Whisk ingredients together in small bowl until well blended. Chill for at least one hour before use. Can be stored in the refrigerator until ready to use.
