If you’re planning a leisurely weekend brunch, these baked egg cups are a great addition to the menu. They’re easy to make and taste gourmet!

What you’ll need for 12 egg cups

  • 12 eggs
  • 12 pieces of bacon
  • 12 teaspoons of melted butter
  • 3 slices of cheddar cheese
  • additional toppings of your choice (spring onions, chives, broccoli, tomato, spinach, etc.)

How it’s done

  1. Preheat the oven to 350 degrees
  2. Fry one piece of bacon per person in a large skillet over medium-high heat. Cook until browned but still flexible (about 45 seconds on each side)
  3. Remove the bacon from the heat and wrap one slice into each muffin cup
  4. Place 1 teaspoon of melted butter into the bottom of each cup
  5. Crack one egg into each cup
  6. Bake in preheated oven for 10-15 minutes
  7. Remove  the pan and top each cup with 1/4 slice of cheddar cheese
  8. Return to the oven for 2-3 minutes or until the cheese is completely melted
  9. Run a butter knife around the edges of each cup to ensure they will come out easily
  10. Gently lift from the pan
Now they’re ready to eat. Try serving with fresh fruit, toast, sausage and hash browns.
