If you’re planning a leisurely weekend brunch, these baked egg cups are a great addition to the menu. They’re easy to make and taste gourmet!
What you’ll need for 12 egg cups
- 12 eggs
- 12 pieces of bacon
- 12 teaspoons of melted butter
- 3 slices of cheddar cheese
- additional toppings of your choice (spring onions, chives, broccoli, tomato, spinach, etc.)
How it’s done
- Preheat the oven to 350 degrees
- Fry one piece of bacon per person in a large skillet over medium-high heat. Cook until browned but still flexible (about 45 seconds on each side)
- Remove the bacon from the heat and wrap one slice into each muffin cup
- Place 1 teaspoon of melted butter into the bottom of each cup
- Crack one egg into each cup
- Bake in preheated oven for 10-15 minutes
- Remove the pan and top each cup with 1/4 slice of cheddar cheese
- Return to the oven for 2-3 minutes or until the cheese is completely melted
- Run a butter knife around the edges of each cup to ensure they will come out easily
- Gently lift from the pan
