Winter is in full swing throughout the good ole U.S.A. which means it’s time to add some flair to warm up your day-to-day life! A super fun and easy way to bring a smile to the faces of your family is to surprise them with breakfast for dinner…or make the meal as a family! One recipe that many Americans are intimidated by is the much feared crepe. Believe it or not, they’re really simple to make. If you can make a pancake, you can definitely make a crepe; and the best part is that they’re fun to flip! Cassey Ho shares a fantastic Cheap Clean Eats recipe for healthy and inexpensive crepes.

Here’s what you’ll need

  • 1 egg
  • 1 teaspoon cinnamon
  • 1 banana
  • 1/3 cup oats
  • 1/4 cup almond milk
  • 1 serving stevia
  • 4 strawberries
  • Non-stick pan with rounded corners
  • Cooking spray (or butter)

Here’s how it’s done

  1. Blend up oats in food processor.
  2. Combine ground oats and cinnamon, 1/2 banana, milk and egg; then, blend thoroughly in the food processor.
  3. Chop strawberries and banana, set aside.
  4. Add cooking spray (or butter) to pan; heat the pan on medium heat.
  5. Add thin layer of batter to pan and tilt to make an even layer of batter.
  6. Once bubbles appear, flip the crepe (feel free to use a fork or spatula if you’re not interested in showing off your chef-style flipping skills).
  7. Pre-fill your crepes with fruit and any other fillings you like, or let your family add their own!
