BREAKFAST: Spinach Waffles

Oh, come on. You can’t tell us these don’t look good. They look amazing… even if they are green. So what’s in them? How about: 1 egg, some Greek yogurt, oats, stevia, and (you guessed it) spinach.

LUNCH: Crustless Spinach, Mushroom & Feta Quiche

These bite-sized babies have a tasty charm of their own. They’re super cute and let you use your pizza cutter for something other than pizza! Just whip up this dough, roll it out, and spin your pizza cutter across it in even rows and columns to make these rustic little squares.
