Helen Cavallo shows us how to make 3 simple and mouth-watering salad dressings to go with 3 fresh summer salads. Just add the dressing ingredients to a mason jar, shake and pour over the accompanying salad.
Ranch
- 1 cup plain yogurt
- dill
- parsley
- chives
- 1/4 cup buttermilk or mayo
- juice of 1 lemon
- salt & pepper
Lettuce Cups
- 1 celery stalk
- 1 carrot
- 1 avocado
- 2 tablespoons cilantro
Cilantro Dressing
- 1 bunch finely minced cilantro
- 1/2 stalk of minced scallion
- 1 tablespoon soy sauce
- 1/4 cup white vinegar
- salt & pepper
- add olive oil (until you have the desired consistency)
Shaved Cabbage Salad
- 1/4 head of red cabbage
Citrus Dressing
- 2 naval oranges
- 1/2 teaspoon honey
- 1 tablespoon white vinegar
- salt & pepper
- 1/4 cup olive oil
Fennel Salad
- 1 shaved fennel bulb
- 1/4 shaved red onion
- 1/4 cup sliced Kalamata olives
- add some sliced grapefruit or orange for garnish
