What you’ll need for the crust

  • Cupcake liners
  • 2/3 cup graham cracker crumbs (about 5 whole crackers)
  • Rolling pin
  • 3 tbsp. unsalted butter, melted
  • 1 ½ tbsp. granulated sugar
  • Pinch of salt

What you’ll need for the filling

  • 2 – 8 oz. packages cream cheese – softened
  • ½ cup granulated sugar
  • 1 tsp. vanilla bean paste or pure vanilla extract
  • 2 large eggs at room temperature
  • ¼ cup sour cream at room temperature
  • 2 tsp. lemon zest
  • Pinch of salt

What you’ll need for the topping

  • Seedless strawberry (and/or raspberry) jam
  • Fresh strawberries – cut in half lengthwise
  • Fresh raspberries
  • Fresh blueberries
