Makeover National Chocolate Mousse Day (April 3) with a healthy twist on the decadent dessert! That’s right, this vegan chocolate mousse recipe uses avocados instead of heavy cream to produce an irresistibly creamy consistency with an extra dose of vitamins and minerals. Sounds like the perfect excuse to celebrate the day the right way — with a second serving of dessert!

Yield: 4 servings
Recipe adapted from: Chocolate Covered Katie

Ingredients:

Flesh of 2 ripe avocados
1/2 cup cocoa powder
1/4 to 1/2 cup milk
1 tsp vanilla extract
1/8 tsp salt
2-3 packets of stevia or 2-4 tbsp maple syrup
Toppings like whipped cream, fruit, chocolate chips, or coconut flakes (optional)

Method:

1. Place all ingredients in the bowl of a blender or food processor and blend until smooth, scraping down the sides of the bowl as needed. Start with less milk and sweetener and slowly add more until the desired consistency and flavor is reached.

2. Spoon into 4 bowls and chill for at least 30 minutes before serving with your choice of toppings
