What’s better than biting into a freshly baked chocolate chip cookie on National Chocolate Chip Cookie Day (August 3, 2018)? How about a warm, gooey chocolate chip cookie pie that’s also secretly healthy!

You heard right, this decadent cookie pie gets its irresistibly moist texture from garbanzo beans. These little legumes provide fiber, protein, and vitamins for a dessert that satisfies your body as well as your taste buds. Ingredients:

2 cans garbanzo beans, drained and rinsed
1 cup quick oats
1/4 cup applesauce
3 Tbsp oil
2 tsp vanilla extract
1/2 tsp baking soda
2 tsp baking powder
1/2 tsp salt
1 1/2 cup brown sugar
1 cup chocolate chips

Method:

1. Preheat oven to 350°F.
2. Add all of the ingredients except the chocolate chips to a food processor (or blender) and blend well, then mix in the chocolate chips.
3. Pour the batter into a greased 10-inch round pan and bake for 35-40 minutes.
4. Let stand at least 10 minutes before removing from the pan.
